The reporter learned from Jiangnan University on June 1 that the team of Professor Zhang Wei from the Food College of the school developed a microwave and vacuum frying integrated device for conditioning foods and an efficient frying method to solve vacuum frying and microwave drying. Two major categories of similar mainstream technologies are common in low efficiency, high energy consumption, poor uniformity, and low yield.
Professor Zhang Wei introduced that the research project mainly aims at the large-scale conditioning foods. Through the establishment of a new method of pulse injection and material rotation, the company has developed a microwave-based homogenization spray and vacuum frying integrated high-efficiency frying. The new system solves the problems of low efficiency, high energy consumption, poor uniformity and low yield, which are common in vacuum mainstreaming and microwave drying. It ensures the uniform microwave power of the material and significantly improves the microwave frying. The uniformity effectively shortens the frying time, thereby reducing the frying energy consumption, and at the same time improving the preservation rate of the main nutrients of the fried products, and has a high promotion and application value. The project also set up a patent protection network around the core technology of this patent, and extended to different food drying raw materials, upstream and downstream industrial technology, and applied for and authorized more than 60 domestic and foreign invention patents (10 overseas patents).
It is understood that the research results have been successfully applied in the six licensed leading enterprises. In the past two years, 8990 tons of processed fried dehydrated food and 205 sets of equipment have been newly added, with new sales of 2 billion yuan and new profits. 340 million yuan, an additional 440 million yuan in foreign exchange earned, and achieved remarkable economic and social benefits. Recently, the research project won the 10th Jiangsu Provincial Patent Project Award.
